Roasted-soybean bar, ten soft-tan shards, earthy and honeyed, built to convert the chocolate loyalists.

Compare

Description

Snaps into ten soy-tan shards that the dark-chocolate crowd walks right past. Let them. Roasted soybean flour carries a toasty, nutty depth, wild honey sweetens it low and slow, brown butter rounds it, and a graham edge gives it structure. Snap a shard into warm milk or coffee for something nutty and calm, break a few over vanilla ice cream, or slip the bar into a stocking for the friend who’s not big on sweets. Contains honey. Soft-spoken the whole way down, right until you look over and the bar is gone.

Ingredients

White chocolate couverture (cocoa butter, sugar, milk, sunflower lecithin), roasted soybean flour (kinako / injeolmi), wild honey, brown butter, graham crumb (wheat flour, sugar, honey), sea salt.

Allergen Information

Contains milk, soy, wheat. Shared equipment: eggs, tree nuts, peanuts, sesame.

Storage

Store sealed at 60–68°F (16–20°C), somewhere cool, dry, and out of the light. Best within 30 days. Once you've opened it, ten to fourteen days. Do not refrigerate — the bar sweats and the facets lose their gloss. Do not freeze. Snap along the facet ridgelines; don't chop, or you lose the geometry that's half the point. Fold the sleeve closed between encounters. Reads matte when cool; surface gloss means it warmed past 70°F — put it back in a cool drawer.

Dietary

Vegetarian; contains honey (not vegan), wheat. Not gluten-free. Non-GMO.

Sustainability

Matte cocoa slide sleeve over a compostable inner fold, printed on FSC-certified board with soy-based inks and water-based coatings. Turquoise foil stamping is food-grade and aluminum-free where the supplier offers it. Couverture sourced Direct Trade and Rainforest Alliance, single-origin Bahia where the flavor calls for it. Dairy from regional farms within a 250-mile radius wherever the season allows. No artificial colors — the color you see is cocoa, caramel, fruit, or nut doing the work. No high-fructose corn syrup. No palm oil in the base couverture. No pretzels anywhere in the line. Single-origin cacao from a Bahia partner; the stout depth reduced in-house from cheap dark malt so it costs pennies.
